Restaurant chef Loft by Hot Potato told how to prepare an appetizing, bright and very tasty Easter cake-craffin.
You can use any candied fruits, dried berries, nuts, etc. as a filling – follow your taste and preferences!
The specified amount of ingredients makes 4 craffins with a diameter of 9 cm and a height of 11 cm.
Ingredients:
- 130 ml of milk
- 30 g raw yeast (or 10 g dry)
- 50 g butter
- 100-150 g sugar
- 10 g of vanilla sugar
- 1 egg + 2 yolks
- one orange
- 350-400 g flour
- 100 g butter for greasing
- 100 g candied fruit
- 100 г изюма
Preparation
Wash and dry the raisins. Finely chop the candied fruit. Squeeze the juice from the orange (you will need 50 ml). Set all this aside for now.
Prepare the dough: heat the milk (it should be warm, but not hot), add 1 tbsp. sugar and yeast. Mix. Pour in 50 g of flour and mix again. Let the dough rise (on average, this takes about 20 minutes).
Prepare the dough: beat the egg, yolks, sugar and vanilla sugar. Add softened butter and orange juice. Mix. Add the dough, mix again. Pour in the remaining flour and knead the dough (knead for about 10 minutes). Cover the dough with film and let it rise (this takes about 2,5 hours).

Divide the dough into 3-4 parts (the number of cruffins you will be making). Roll each part thinly into a rectangle, grease with softened butter, add raisins and candied fruits, roll into a roll and pinch the edges.
Cut the roll lengthwise, not reaching the end. Roll one half (with the cut facing outward), wrap the second half around the first (also with the cut facing outward). The process is shown in the collage.

Place cruffins in baking dishes and let rise.
Place the risen craffins in an oven preheated to 180 degrees Celsius and bake for 30-40 minutes. The finished kulich can be decorated to your taste.
